Looking for a new and easy side dish to try? This Spanish rice is awesome, only a few ingredients and it tastes so much better than the store bought kind. My husband is super picky and even he enjoyed it. Serve it on the side with tacos or enchiladas and it’s the perfect addition.
Spanish Rice
Ingredients –
1 ½ C. uncooked white rice (do not use quick cooking rice)
2 tbs. oil
1 bunch of green onions, diced
2 tsp. cumin
1 C. salsa
2 C. chicken broth (you can also substitute 2 cups of water with 2 chicken bouillon cubes – I heat it in the microwave for 3 minutes)
Directions –
#1. In a medium pan, heat the 2 tablespoons of oil and saute the green onions for about 5 minutes on medium heat. Add in the uncooked rice and saute until brown (about 5 minutes).
#2. Add in the cumin, salsa and chicken broth. Reduce heat to low-medium depending on your stove and cover. Simmer for about 20 minutes. If the rice is not done after 20 minutes allow to cook a few more minutes. Fluff with a fork and serve.
