Another dinner idea- I’ve gotten so bored with our regular meals from the long winter and am so ready for fresh, new ideas. My friend Jill shared this Spinach, Chicken Sausage and Quinoa dish that’s great FOR you, super high in protein and really, just amazingly delicious. The kids even love it!
2 C. tightly packed spinach, pack it TIGHT as it shrinks immensely
1 package of chicken andouillie sausage (I used Al Fresco brand, as shown in the photo)
1 C. uncooked Quinoa
1 3/4 C. chicken broth OR 2 C. water and 2 chick bouillon cubes
1 bunch of green onions, chopped
1 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
2 tsp. olive oil
Bring the chicken broth to a boil and add in the uncooked quinoa. Simmer on low, covered, stirring occasionally until cooked through. About 10-15 minutes. Fluff with a fork.
In a medium pan heat the 2 teaspoons of olive on medium heat.
Saute the spinach, green onions sausage and seasonings until browned, about 10 minutes.
Add in the cooked quinoa and mix well. Allow to cook a few minutes.
Serve immediately. Store leftovers covered in the fridge.
*Makes approximately 4-5 servings.
