Summer Treats – Summer Fun Cake Balls

We love to have summer gatherings and we’re always looking for fun Summer Treats to share with our friends and family.  We made these adorable Summer Fun Cake Balls to kick off summer vacation now that the kids are FINALLY finishing up school!  Nothing says summer like flip flops and beach balls, right?

My new Cuisinart 5-1/2 Quart Mixer arrived just in time for me to make these summer treats!

 I’ve been using a stand mixer for years but recently had worn out many of the attachments and decided to give this powerful Cuisinart model a try.  It made making these summer treats so much easier!

 

Summer Treats – Summer Fun Cake Balls

Cake Ball Recipe Ingredients:

  • 1 cup granulated sugar
  • 1 1/2 cups flour
  • 1 3/4 tsp baking powder
  • 1/2 cup softened butter
  • 2 eggs
  • 1/2 cup milk
  • 1 1/2 tsp pure vanilla extract

Instructions:

Preheat oven to 350 degrees

Sift together the flour and baking powder in medium bowl

In bowl of stand mixer, cream granulated sugar and butter.  Add the vanilla to the sugar mixture followed by eggs, 1 to a time beating until well blended.

Gradually add dry ingredients to the creamed mixture in the stand mixer.  Mix on medium for until completely combined.

Add milk and continue mixing until batter is smooth.

Spray non stick bakers spray into cavities of doughnut hole pan and spoon batter into pan.

Bake in preheated oven for 5-7 minutes.  Transfer to cooling rack and cool completely.

Cake Ball Decorating Supplies:

  • white candy melts (1 package will do 25 cake balls)
  • blue candy melts (1 package will do 25 cake balls)
  • chocolate candy melts (1/2 package will do 25 cake balls)
  • graham cracker crumbs (1 box for cake balls and plating)
  • sugar crystal sprinkles in red, yellow, orange, green, and blue
  • prepared fondant in bright colors for the flip flops (We really like Satin Ice brand)
  • parchment paper

Instructions:

Chill cake balls in freezer for 15-20 minutes.

Melt white & blue candy melt in separate bowls according to package instructions.

Remove cake balls from the freezer and coat with candy melt and transfer to parchment paper to harden.  You should have roughly the same number of blue cake balls as white.

After the candy melt has hardened, melt chocolate candy melt according to package instructions.  Carefully coat 1/2 of each blue cake ball with chocolate candy melt and dip in graham cracker crumbs.

Return to parchment paper to harden.

While the blue cake balls harden, melt a small amount of white candy melt to decorate the “beach balls”.

Poor colored sugar crystals into bowls or cupcake wrappers for dipping.

Spread a small stripe of melted white candy melt onto the white cake ball and dip into the first colored crystals.

Repeat with all colors to form the beach ball.  Return to parchment paper to harden.

While the cake balls harden, begin forming little flip flops from the brightly colored fondant.  Simply roll small balls between your palms and flatten with your fingertips.  Pinch to shape like a flip flop.

Using a small amount of melted white candy melt and a toothpick or spoon, add the straps off the flip flops.  I added a small sprinkle of a contrasting color to the strap for detail.

When the cake balls are set, use a bit of melted candy melt to attach the flip flops to the beach cake balls.

Pour remaining graham cracker crumbs onto a platter and display these Summer Fun Cake Balls in the “sand” created by the crumbs for the cutest summer treats!

I really loved using my new Cuisinart 5-1/2-Quart 12-Speed Stand Mixer, White SM-55 for this baking project and all the other baking I did this past weekend.  It’s 5 1/2 quart mixing bowl makes it easy to do large batches of cake batter, frosting, cookie dough, and the 800 watts of power means it is powerful enough to mix my homemade fondant!  It has a timer so I can set it and come back to it when it has mixed long enough.  The hooks, paddles, and whisks are very sturdy and unlike my previous mixer, they are not nylon coated so I won’t have to worry about them chipping!
