Vegan Cookies
Ingredients
3 Ripe Bananas
2 ½ Cups Oats
½ Cup Golden Raisins, chopped
½ Cup Sweetened Coconut, chopped
1/3 Cup Pecans, finely chopped
1 teas. Cinnamon
2 teas. Vanilla
1/3 Cup Oil
Instructions
In a large bowl mash the Bananas with a fork.
Add in the remaining ingredients and thoroughly combine
Take a rounded tablespoon full and roll into a ball, place on an ungreased cookie sheet and flatten into a circle.
Bake at 350˚ for 10 minutes, rotate the cookie sheets and cook until browned on the bottom and springy on top, an additional 8-10 minutes.
Remove and cool on a wire rack. Store in an airtight container.

These look pretty good and although I am not aa vegan, we would enjoy them. I like how they seem to use bananas rather than eggs to bind them. Very creative!
